Harvest: The grapes are picked up by hand usually by the middle of September.
Vinification: The must goes immediately to the pressing. The first fermentation happens at 12°, and the following staying on fine dregs lasts about two months.
Alcohol: 11% vol.
Sugar: 8 g/l;
Total acidity: 7 g/l;
A delicate yellow color with straw-yellow highlights introduce flower and fruity scents, even of toasted fruit; it offers a delicate and dry taste, balanced on the palate.
Best served with fish and white meat.
